Preparation

  • Grate the potatoes and place them in a clean kitchen towel or cheesecloth. Squeeze out any excess liquid.
  • In a large mixing bowl, combine the grated potatoes, eggs, flour, garlic powder, salt, and pepper. Mix until it forms a cohesive mixture.
  • Heat a skillet over medium heat. Add ground beef and cook until browned.
  • Incorporate chopped onion and minced garlic into the pan, stirring until softened.
  • Season the beef mixture with paprika, cumin, salt, and pepper. Allow to cool slightly.

Cooking

  • Take a handful of the potato mixture and flatten it into a thin pancake shape.
  • Spoon a portion of the beef filling on top of the potato disc, followed by a sprinkle of shredded cheese.
  • Carefully cover the filling with another layer of the potato mixture, sealing the edges tightly.
  • Heat vegetable oil in the skillet. Place the stuffed pancakes into the pan and cook until golden brown on each side, about 3-4 minutes.
  • Garnish with freshly chopped parsley if desired.

Notes
