Frosting Ingredients

  • 1 pound cream cheese, softened creamy and rich
  • 2 sticks unsalted butter, at room temperature for smoothness in frosting
  • 1 tsp vanilla extract extra flavor boost
  • 4 cups sifted confectioners’ sugar for sweetness and texture

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them or lining the bottoms with parchment paper.
  • In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, salt, and cocoa powder until well combined.
  • In a separate bowl, mix together the vegetable oil, buttermilk, eggs, red food coloring, white vinegar, and vanilla extract. Add this mixture to the dry ingredients and stir until smooth.
  • Stir in the purple food coloring, adding more as needed to achieve your desired shade of purple.

Baking

  • Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.

Frosting

  • Beat the softened cream cheese and butter in a large bowl until smooth and creamy.
  • Add the vanilla extract and gradually incorporate the sifted confectioners’ sugar until you achieve a perfect frosting consistency.

Assembly

  • Once the cakes have completely cooled, spread a generous layer of cream cheese frosting on top of the first layer before gently placing the second layer over it.
  • Use the remaining frosting to cover the entire cake and decorate as desired.
