Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease or line a muffin tin with cupcake liners.
  • In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  • In a separate larger bowl, mix the melted butter, sugar, eggs, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet mixture, alternating with whole milk until just combined.
  • Gently fold in the raspberries and chopped chocolate.

Baking

  • Fill each muffin cup about two-thirds full with the batter.
  • In a small saucepan, gently heat heavy cream and butter until melted. Stir in chopped chocolate until smooth.
  • Spoon a dollop of the molten chocolate mixture into the center of each muffin cup.
  • Bake for 12-15 minutes, until the edges are set and the centers are soft.
  • Let cool in the tin for 5 minutes, then remove and cool on a wire rack.
  • Dust with powdered sugar and garnish with raspberries and mint leaves if desired.
