For the raspberry drizzle

Instructions
 

Make the tart crust

  • Preheat your oven to 375°F (190°C).
  • In a food processor, pulse together the all-purpose flour, powdered sugar, and salt until well combined.
  • Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.
  • Incorporate the egg yolk and cold water, pulsing until the dough comes together.
  • On a lightly floured surface, roll the dough out and fit it into tart pans or a 9-inch tart shell.
  • Press the dough firmly into the pan, trimming any excess.
  • To prevent bubbling, prick the bottom of the crust with a fork.
  • Bake for 12-15 minutes, or until the crust is golden brown.
  • Allow the shells to cool completely before filling them.

Make the pistachio cream filling

  • In a mixing bowl, whisk together the finely ground pistachios, heavy cream, powdered sugar, and vanilla extract until combined.
  • Stir in the melted butter, then beat the mixture until smooth and thickened.

Prepare the raspberry drizzle

  • In a saucepan, combine fresh raspberries, sugar, and lemon juice.
  • Cook over medium heat for approximately 5-7 minutes, mashing the raspberries as they cook to release their juices.
  • Once cooked, strain the mixture through a fine-mesh sieve to remove the seeds.
  • Let this drizzle cool to room temperature.

Assemble the tarts

  • Spoon the pistachio cream filling generously into the cooled tart shells.
  • Drizzle the raspberry sauce over the top.
  • Chill the tarts in the refrigerator for at least 2 hours before serving.
  • Garnish with extra crushed pistachios or fresh raspberries before serving.

Notes

Consider toasting the shelled pistachios before grinding to enhance their nutty flavor. Ensure the heavy cream is chilled for optimal whipping. A touch of mascarpone cheese can be folded in for a richer filling.
