Raspberry Filling

Preparation

  • In a large mixing bowl, sift together the powdered sugar, almond flour, and pistachio flour until fine.
  • In another bowl, beat egg whites with cream of tartar until soft peaks form.
  • Gradually add granulated sugar while whipping until stiff peaks are reached. Optionally, add green food coloring.
  • Gently fold the dry ingredients into the whipped egg whites until homogenous.
  • Transfer the batter to a piping bag.

Baking

  • Pipe small circles onto the baking sheets, leaving space for expansion.
  • Tap the baking sheets gently to release any trapped air bubbles.
  • Allow piped macarons to rest at room temperature for 30-45 minutes.
  • Bake in the preheated oven for 18-20 minutes, rotating trays halfway through.
  • Cool completely before removing them from the parchment paper.

  • In another bowl, beat softened butter and powdered sugar until creamy.
