Preparation

  • Preheat your oven to 375°F (190°C). If using a premade pie crust, unroll it carefully and gently press it into tart pans, ensuring even coverage. Prick the bottoms with a fork to prevent bubbling.
  • Bake your prepared crusts for 10–12 minutes, or until golden brown. Once done, let them cool completely on a wire rack.

Filling

  • While the crusts are cooling, whip together the mascarpone (or cream cheese), powdered sugar, and vanilla extract until smooth and creamy.
  • In a separate bowl, mash half of the fresh raspberries with raspberry jam and lemon juice until they combine beautifully.

Assembly

  • Once the tart shells are cool, spread the mascarpone mixture evenly into each shell, creating a lush layer.
  • Top with the raspberry mixture and sprinkle whole raspberries over the tarts for a colorful finishing touch.
  • For an elegant presentation, add fresh mint leaves on top as a garnish.
  • Chill the tarts in the refrigerator until ready to serve, allowing the flavors to meld.

Notes

For a gluten-free option, craft your own pie crust using almond or coconut flour mixed with coconut oil. Consider adding finely chopped nuts or chocolate chips beneath the mascarpone for a delightful crunch.
