Preparation

  • Preheat the oven to 325°F (165°C) and line a 9×9-inch baking pan with parchment paper.
  • In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until well combined and press into the bottom of the prepared pan.
  • Bake for 8-10 minutes until golden brown and let it cool.

Making the Filling

  • In a large bowl, beat the softened cream cheese until smooth and creamy. Add sugar and vanilla extract.
  • Add the eggs one at a time, mixing well after each addition. Stir in the sour cream until combined.

Creating the Raspberry Swirl

  • Mash the fresh raspberries with a fork until smooth and combine with raspberry jam.
  • Pour the cheesecake filling over the cooled crust. Drop spoonfuls of the raspberry mixture onto the cheesecake and swirl gently.

Baking

  • Bake in the preheated oven for 45-50 minutes until the cheesecake is set with a slight jiggle in the center.
  • Let cool completely before refrigerating for at least four hours.
