Ingredients
  

For the macaron shells

For the raspberry white chocolate filling

  • 1/2 cup fresh raspberries (or raspberry puree) Juicy and tangy, they provide a burst of fruity flavor.
  • 1/2 cup white chocolate chips Creamy and luscious, perfect for a decadent filling.
  • 1/4 cup heavy cream Rich and silky, it adds a luxurious texture to your filling.
  • 2 tablespoons butter Velvety and smooth, it rounds out the filling beautifully.

Instructions
 

Preparation

  • Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper or silicone mats.
  • Sift together the powdered sugar and almond flour into a bowl.
  • In a separate bowl, whisk the egg whites until they form soft peaks, gradually adding in the granulated sugar until stiff peaks form.
  • Gently fold in the sifted powdered sugar and almond flour mixture. Add pink food coloring if desired, mixing until the batter flows like lava.
  • Transfer the batter to a piping bag fitted with a round tip and pipe circles onto the prepared baking sheets, tapping to release air bubbles.
  • Allow the macarons to rest for 30-45 minutes until dry to the touch.

Baking

  • Bake the macarons for 15-18 minutes, then let them cool on the sheets.

Filling Preparation

  • In a saucepan, cook fresh raspberries over medium heat until they break down. Strain to eliminate seeds.
  • In another saucepan, heat heavy cream until simmering, then mix in white chocolate chips and butter until smooth.
  • Mix in the raspberry puree and let the filling cool to room temperature.

Assembly

  • Pipe the raspberry white chocolate filling onto the flat side of one macaron shell and sandwich with another.
  • For best results, let them sit in the fridge for at least 24 hours before serving.

Notes

Ensure utensils are clean and grease-free when whipping egg whites. Allow shells to rest to avoid cracking. Practice makes perfect with macarons.
