Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Grease and line an 8×8-inch baking pan with parchment paper.
  • In a medium bowl, melt the butter and whisk in the sugar until combined.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the vanilla extract and red food coloring until fully incorporated.
  • In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • Pour the brownie batter into the prepared pan.

Cream Cheese Swirl

  • In a bowl, beat together softened cream cheese and sugar until smooth.
  • Add the egg and vanilla extract and mix until combined.
  • Drop spoonfuls of the cream cheese mixture over the brownie batter and swirl with a knife.

Baking

  • Bake in the preheated oven for 30-35 minutes or until a toothpick comes out with a few moist crumbs.
  • Allow to cool in the pan for 10 minutes, then lift out using parchment overhang.
  • Cool completely on a wire rack.

Notes

For a healthier version, substitute granulated sugar with coconut sugar or maple syrup, and use almond flour for a gluten-free option.
