For the strawberry topping

  • 1 cup fresh strawberries, hulled and sliced Provides freshness.

  • 0.25 cups heavy whipping cream For whipped topping.

Instructions
 

Preparation

  • Preheat your oven to 325°F (165°C).
  • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter until resembling wet sand. Press into a 9-inch springform pan and bake for 10 minutes. Let cool.
  • In a large bowl, beat together softened cream cheese, sour cream, granulated sugar, vanilla extract, cocoa powder, and red food coloring until smooth.
  • Incorporate eggs one at a time, mixing after each. Add flour and mix until combined.

Baking

  • Pour the cheesecake mixture over cooled crust, spreading evenly. Tap lightly to release air bubbles. Bake for 55-60 minutes until set but slightly jiggly in the center.
  • Cool at room temperature, then refrigerate for at least 4 hours or overnight.

Topping

  • Combine sliced strawberries with 2 tablespoons of sugar, allowing to sit for 10 minutes.
  • Whip heavy cream with powdered sugar until stiff peaks form.

Serving

  • Carefully remove cheesecake from springform pan. Top with whipped cream and strawberry mixture. Serve chilled.

Notes

Use room temperature ingredients for a smooth batter. Consider adding a touch of cinnamon or nutmeg for extra flavor. Don't overbake; maintain a slight jiggle in the center.
