  • 0.25 cups sugar
  • 0.5 cups melted unsalted butter Ensure it’s not too hot when mixing.

For the cheesecake filling

  • 16 oz softened cream cheese Must be at room temperature.
  • 1 cup sugar
  • 1 teaspoon vanilla extract For added flavor.
  • 3 large eggs Add one at a time.
  • 1 cup sour cream For creaminess.
  • 2 tablespoons red velvet cake mix This will give the color and flavor.

For the strawberry topping

  • 2 cups hulled and sliced fresh strawberries Use fresh for best results.
  • 0.25 cups sugar Adjust based on sweetness of strawberries.
  • 1 tablespoon lemon juice Brightens the flavor.

Preparation of Crust

  • Preheat the oven to 350°F (175°C).
  • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well-combined.
  • Firmly press the mixture into the bottom of a 9-inch springform pan.
  • Bake for 8-10 minutes and then let cool.

Preparation of Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Gradually add the sugar and vanilla extract while mixing.
  • Add the eggs one at a time, mixing well after each addition.
  • Fold in the sour cream and red velvet cake mix just until combined.

Baking the Cheesecake

  • Pour the cheesecake filling over the cooled crust and smooth the top.
  • Bake for about 50-60 minutes until the center is set but jiggles slightly.
  • Turn off the oven, crack the door open, and let the cheesecake cool for about an hour.

Preparation of Strawberry Topping

  • In a bowl, combine the sliced strawberries, sugar, and lemon juice.
  • Toss gently and let sit for 15-20 minutes to create a syrupy glaze.

Assembly and Chilling

  • Once cooled, refrigerate the cheesecake for at least 4 hours or overnight.

Notes
