  • 1 tablespoon olive oil
  • 8 oz crimini mushrooms, sliced
  • to taste salt and pepper to taste
  • 16 oz potato gnocchi
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 teaspoon Italian seasoning or Herbs from Provence
  • 1/2 teaspoon smoked paprika or more to taste
  • 5 oz fresh spinach
  • 1/4 teaspoon salt or to taste
  • to taste coarsely ground black pepper to taste
  • to taste red pepper flakes to taste

Instructions
 

Cooking

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the sliced crimini mushrooms, seasoning with salt and pepper. Cook for about 1 to 2 minutes until lightly browned.
  • Remove half of the mushrooms from the skillet and set them aside.
  • Add the potato gnocchi, chicken broth, heavy cream, minced garlic, Italian seasoning, smoked paprika, and 1/4 teaspoon of salt to the skillet.
  • Bring the mixture to a boil, then cover the skillet and cook for 5 minutes.
  • Add the fresh spinach to the skillet and stir until wilted.
  • Taste and adjust seasoning with additional salt, black pepper, and red pepper flakes before serving.

Notes

Use fresh herbs for added flavor. Top with freshly grated Parmesan cheese or a squeeze of lemon juice for brightness. Adjust spice levels according to taste.
