Roasted Blackened Cauliflower and Veggie Salad

Ingredients
  

For the roasted vegetables

  • 1 head organic cauliflower, cut into florets The star ingredient for this salad.
  • 2 tablespoons extra virgin olive oil For roasting the cauliflower.
  • 1 tablespoon blackened seasoning Enhances the flavor of the cauliflower.
  • 1 tablespoon pure maple syrup Adds sweetness to balance the flavors.
  • 1 teaspoon smoked paprika For a hint of smokiness.
  • 2 cups sweet corn kernels (white or yellow) Provides sweetness and crunch.
  • 1 bunch broccolini, ends trimmed Adds a fresh, crunchy texture.
  • 1-2 tablespoons extra virgin olive oil For roasting corn and broccolini.
  • 1 teaspoon sea salt Enhances the flavors of the roasted veggies.
  • 1 teaspoon black pepper Adds spice to the mix.

For the salad base

  • 2 bunches organic kale, de-stemmed and roughly chopped Provides a nutritious base.
  • 2 jalapeños, chopped For added heat.
  • 1 organic cucumber, peeled and sliced Adds freshness.
  • 1 Haas avocado, peeled, pitted, and chopped Includes healthy fats.

Instructions
 

Preparation

  • Preheat your oven to 400°F and line two baking sheets with parchment paper.
  • In a mixing bowl, combine the cauliflower florets with 2 tablespoons of extra virgin olive oil, blackened seasoning, maple syrup, and smoked paprika. Toss until evenly coated and spread on one of the prepared baking sheets.
  • On the second baking sheet, toss the sweet corn and broccolini with 1-2 tablespoons of olive oil, sea salt, and black pepper.

Roasting

  • Place both trays in the oven and roast for 20 to 25 minutes, or until the vegetables are charred and golden.
  • Allow them to cool slightly once out of the oven.

Assembly

  • While the veggies are cooling, massage the chopped kale with lemon juice or olive oil until softened.
  • In a large salad bowl, layer the massaged kale, roasted cauliflower, sweet corn, broccolini, cucumber, jalapeños, and avocado.
  • Serve with a generous helping of Green Goddess Dressing.

Notes

For a perfect roast, consider using a convection oven if available. You can elevate the flavors by adding roasted nuts like pecans or almonds for added crunch. Adjust the blackened seasoning based on your spice preferences.
