  • 2 heads cauliflower About 4 pounds total
  • 1 small yellow onion, chopped
  • 5 cloves garlic, chopped
  • 32 ounces low-sodium vegetable broth
  • 2 cups whole milk or unsweetened plant-based milk
  • 1/2 each lemon, juiced
  • 1 cup fresh dill, chopped

Spices

  • 2 teaspoons ground cumin
  • 2.5 teaspoons sweet paprika
  • 1 teaspoon ground sumac
  • 1/4 teaspoon ground turmeric

  • 2 tablespoons extra virgin olive oil For roasting cauliflower

  • 2 tablespoons olive oil For sautéing onion and spices

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C). Cut the cauliflower in half through the stem and slice off each floret.
  • Chop larger florets into uniform sizes for even roasting.

Roasting

  • Arrange the cauliflower florets on a large sheet pan. Season with kosher salt and black pepper.
  • Drizzle with extra virgin olive oil and toss to coat. Spread in a single layer for optimal roasting.
  • Roast in the preheated oven for about 45 minutes, turning once halfway through.

Cooking

  • In a Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent.
  • Add the chopped garlic, cumin, paprika, sumac, and turmeric, cooking until fragrant.
  • Add ¾ of the roasted cauliflower, vegetable broth, and a splash of water. Bring to a boil, then lower heat and simmer for 5-7 minutes.

Blending & Finishing

  • Blend the mixture using an immersion blender or transfer to a blender for a smoother texture.
  • Stir in the milk and lemon juice, add the remaining roasted cauliflower, and warm through. Adjust seasoning if needed and fold in the fresh dill before serving.

Notes

Optional: Roast garlic cloves along with cauliflower for added flavor. You can steam cauliflower instead of roasting for quicker preparation. For variations, consider other vegetables or herbs.
