Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  • In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  • In a separate, larger bowl, beat the melted butter and granulated sugar until light and fluffy.
  • Add in the yogurt, milk, rose syrup, and vanilla extract to the butter and sugar mixture, mixing until fully combined.

Baking

  • Gradually incorporate the dry ingredients into the wet mixture, stirring gently until just combined.
  • Pour the batter into the prepared cake pan and spread it evenly.
  • Bake for 25-30 minutes. To check doneness, insert a toothpick into the center; it should come out clean.
  • Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Soaking and Topping

  • Prepare the milk mixture by combining the condensed milk, whole milk, heavy cream, and an added tablespoon of rose syrup in a small saucepan. Heat over low until well mixed and slightly warm.
  • Poke holes all over the top of the cake using a toothpick.
  • Pour the warm milk mixture over the cake, ensuring an even soak. Let it rest for at least 30 minutes.
  • Whip the cream until soft peaks form and spread it over the top of the cake.
  • Garnish with chopped pistachios and dried rose petals.

Notes

Consider experimenting with additional spices like cardamom or saffron, or infusing the milk mixture with vanilla bean or orange zest. Let the cake soak sufficiently in the milk mixture for enhanced moistness.
