Rosemary Lamb Chops with Homemade Gravy

Ingredients
  

For the lamb chops

  • 750 g 750g (1.5 lb) lamb chops (loin chops, forequarter, cutlets) Lamb cuts can vary, use preferred types.
  • 1/4 cup 1/4 cup extra virgin olive oil For marinating.
  • 3 cloves 3 garlic cloves, finely minced
  • 1 tbsp 1 tbsp rosemary leaves, finely chopped Plus additional for gravy.
  • 1 tsp 1 tsp salt
  • 1 tsp 1 tsp pepper

For the homemade gravy

  • 2 cups 2 cups low sodium beef stock
  • 3 tbsp 3 tbsp plain/all-purpose flour For thickening.
  • 1 tbsp 1 tbsp rosemary leaves, finely chopped
  • 2 sprigs 2 rosemary sprigs (optional) For extra flavor in gravy.

Instructions
 

Marinade

  • Mix the olive oil, minced garlic, chopped rosemary, salt, and pepper in a mixing bowl.
  • Pour the mixture over the lamb chops, ensuring each is well-coated and marinate for at least 1 hour (preferably overnight).

Cooking

  • Remove the marinated lamb from the fridge 30 minutes before cooking to bring it to room temperature.
  • Heat a large skillet over high heat. Let the excess oil drip off before placing the lamb in the hot skillet.
  • Cook loin chops and forequarter chops for about 4 minutes on each side for medium-rare, or cutlets for approximately 3 minutes on the first side and 2 minutes on the second.

Rest

  • Remove the lamb from the skillet and cover loosely with aluminum foil for at least 3 minutes to let it rest.

Gravy

  • Pour off all but about 3 tablespoons of oil from the skillet.
  • Add flour to the skillet over medium heat, stirring for about 30 seconds.
  • Gradually pour in the beef stock while stirring continuously to prevent lumps. Add chopped rosemary and the optional sprig.
  • Simmer the gravy for 2-3 minutes until thickened.

Serving

  • Plate the lamb chops and spoon the homemade gravy generously over them, serving alongside creamy mashed potatoes and green peas.

Notes

For deeper flavors, marinate lamb overnight. Use a meat thermometer for precise doneness.
