Instructions
 

Preparation

  • Toast the shelled pistachios in a dry skillet over medium heat for about 2-3 minutes until fragrant.
  • Allow the toasted pistachios to cool, then pulse them in a food processor until finely ground.

Making the Gelato Base

  • In a saucepan, combine whole milk, heavy cream, granulated sugar, and honey over medium heat, stirring until the mixture simmers.
  • In a separate bowl, whisk the egg yolks until smooth, then gradually add a bit of the hot milk mixture while whisking to prevent scrambling.
  • Incorporate the egg mixture back into the saucepan and cook on low heat until the mixture thickens (about 5-7 minutes).

Finishing Touches

  • Off the heat, stir in rosewater, vanilla extract, ground pistachios, and a pinch of salt.
  • Allow the mixture to cool to room temperature before refrigerating for at least 4 hours or overnight.

Churning the Gelato

  • Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until fluffy.
  • Transfer the gelato to a container and freeze for at least 2 hours before serving.

Notes
