Ingredients

Pasta and Base Ingredients

  • 8 oz rotini pasta Holds onto sauce beautifully.
  • 1 can (10 oz) diced tomatoes and green chilies (Rotel) Provides zesty contrast.
  • 1 cup shredded cheese (cheddar or Mexican blend) For a gooey layer of cheesiness.
  • 1/2 cup diced onion Adds subtle sweetness.
  • 1/2 cup diced bell pepper Adds crunch and bright color.
  • 1 clove garlic, minced Infuses savory notes.
  • 1 tablespoon olive oil For sautéing vegetables.
  • Salt and pepper to taste Essential seasonings.
  • Optional: cooked ground beef or sausage For added protein if desired.

Instructions

Cooking the Pasta

  • Start by bringing a large pot of salted water to a boil. Once boiling, add the rotini pasta and cook according to package instructions until al dente. After cooking, drain the pasta and set it aside, letting it cool slightly.

Sautéing the Vegetables

  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until they are tender and slightly caramelized, about 5 minutes. Add the minced garlic and sauté for an additional minute to release its fragrance.

Adding Tomatoes and Meat

  • Stir in the can of diced tomatoes and green chilies, allowing their flavors to meld. If you’re incorporating the optional cooked ground beef or sausage, add it now. Let the mixture simmer for about 5 minutes.

Combining Pasta and Sauce

  • Gently fold in the cooked rotini pasta, ensuring it is thoroughly coated in the sauce. If the mixture seems dry, add a splash of reserved pasta water to achieve the desired consistency.

Melting the Cheese

  • Sprinkle the shredded cheese generously over the pasta. Cover the skillet and let it cook on low heat for a few minutes until the cheese melts.

Seasoning and Serving

  • Taste the dish and adjust the seasoning with salt and pepper as necessary. Serve the pasta hot, optionally garnished with fresh herbs or additional cheese.

Notes

Consider adding sliced jalapeños for spice, using leftover rotisserie chicken for convenience, or incorporating different cheeses for varied flavors. Fresh herbs enhance the dish's freshness. Prepare ingredients in advance for quick assembly.
