Instructions
 

Preparation

  • Preheat the oven to 375°F.
  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the diced onions and cook for about 2 minutes until translucent.
  • Stir in the minced garlic and cook for about 20 seconds until fragrant.
  • Add the ground beef, season with Italian seasoning, sweet paprika, salt, and pepper, and cook until completely browned.
  • Stir in the fresh baby spinach and cook until wilted.
  • Remove from heat and drain any excess liquid.

Mixing

  • In a baking dish, combine the cooked cauliflower rice, sour cream, butter, and dried basil, mixing until creamy.
  • Fold in the beef and spinach mixture until combined.

Baking

  • Top with shredded Italian blend cheese.
  • Bake for 22 to 25 minutes until bubbling and golden brown.

Serving

  • Let it stand for 7 to 10 minutes before serving.

Notes

For extra kick, add red pepper flakes or bell peppers. Consider Greek yogurt for sour cream to lighten the dish. Great with a side salad or crusty bread.
