Ingredients

For the Salmon Balls

  • 1 lb fresh salmon fillets, skin removed and chopped into bite-sized pieces
  • 1/2 cup breadcrumbs or almond flour for a gluten-free option
  • 1 large egg, lightly beaten
  • 2 tbsp fresh parsley, finely chopped
  • 2 tbsp green onions, chopped
  • 1 tsp garlic powder
  • 1 tsp lemon zest for a burst of freshness
  • Salt and pepper to taste
  • 2 tbsp olive oil for frying

For the Creamy Avocado Sauce

  • 1 ripe avocado for creaminess
  • 2 tbsp Greek yogurt or sour cream for a tangy kick
  • 1 tbsp lime juice for a refreshing zing
  • 1 clove garlic, minced for extra flavor
  • Salt and pepper to taste
  • 2 tbsp water or as needed to reach desired consistency

Instructions

Preparation

  • Chop the salmon: Start by placing the fresh salmon fillets into a food processor and pulse until finely chopped. If you prefer, you can also chop them by hand for a chunkier texture.
  • Combine ingredients: In a large mixing bowl, combine the chopped salmon with breadcrumbs (or almond flour), beaten egg, fresh parsley, green onions, garlic powder, lemon zest, salt, and pepper. Mix well to ensure everything is evenly distributed.
  • Form the balls: Take small amounts of the salmon mixture and roll them into balls about 1-2 inches in diameter.
  • Fry the salmon balls: Heat the olive oil in a large skillet over medium heat. Once hot, carefully add the salmon balls and cook them for about 4-5 minutes on each side until they are golden brown and fully cooked through.
  • Make the avocado sauce: While the salmon balls are cooking, prepare the creamy avocado sauce. In a blender or food processor, combine the avocado, Greek yogurt, lime juice, minced garlic, salt, and pepper. Blend until smooth, adding more water as necessary to reach your desired consistency.
  • Serve and enjoy: Once the salmon balls are cooked, remove them from the skillet and serve them immediately. Pair with the creamy avocado sauce for a delicious dip.

Notes

For extra flavor, consider adding a pinch of red pepper flakes to the salmon mixture. Substitute fresh parsley with dill or cilantro for a different flavor profile. The salmon balls can also be baked at 400°F for approximately 15 minutes instead of frying for a healthier option.
