Instructions
 

Preparation

  • Preheat your oven to 325 degrees Fahrenheit for slow-cooking your chuck roast.
  • Season the chuck roast generously with kosher salt, black pepper, and fresh thyme.
  • Heat vegetable oil in a large pan over medium-high heat until it ripples, then sear the roast for 4-5 minutes on each side.
  • Arrange the halved onions and small Yukon gold potatoes around the roast in the pan.
  • In a bowl, combine beef broth, Worcestershire sauce, and a few sprigs of thyme, then pour this mixture over the roast.
  • Cover with a lid or foil and transfer the pan to the oven.

Cooking

  • Let it cook in the oven for 3 to 3.5 hours until the meat is fork-tender.
  • Once done, remove the pan from the oven. Discard the thyme sprigs and remove the potatoes and roast.
  • On the stovetop, stir in heavy cream and 1/3 cup of blue cheese crumbles into the pan juices until the sauce thickens.
  • Break the roast into large chunks and return it to the pot, serving it with potatoes and topped with gravy.
  • Sprinkle the remaining blue cheese crumbles on top for a stunning presentation.

Notes

For extra flavor, consider marinating the chuck roast overnight in your seasonings. You can add sautéed mushrooms or cooked bacon bits for texture in the gravy. Leftovers can be great for sandwiches or can be stored in the refrigerator for up to 3-4 days.
