Ingredients
  

For the potatoes

  • 4 medium russet potatoes creamy and starchy
  • 3 tablespoons extra virgin olive oil rich and smooth
  • 4 cloves garlic, minced aromatic and flavorful
  • 1 teaspoon dried rosemary fragrant and earthy
  • 1 teaspoon dried thyme warm and slightly minty
  • to taste Salt and pepper enhancing the dish’s flavors
  • Fresh parsley, chopped for garnish, vibrant and refreshing
  • Grated Parmesan cheese (optional) nutty and savory

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash the russet potatoes under cool running water, scrubbing away any dirt.
  • Dry the potatoes thoroughly with a kitchen towel.
  • Slice each potato into thin rounds, about 1/4 inch thick, leaving the bottom intact.

Mixing

  • In a small bowl, mix together olive oil, minced garlic, dried rosemary, dried thyme, and salt and pepper to taste.

Baking

  • Place the sliced potatoes on a baking sheet lined with parchment paper.
  • Use a pastry brush to apply the garlic herb mixture over each slice.
  • Bake in the preheated oven for 35-40 minutes until golden brown and crispy.
  • Optionally, sprinkle grated Parmesan cheese onto the potatoes during the last 5 minutes of baking.

Finishing Touches

  • Remove from the oven and garnish with freshly chopped parsley before serving.

Notes

For thinner slices, reduce the baking time; remember to wash and dry the potatoes well. Rotate the baking sheet halfway through the cooking for even results. You can substitute sweet potatoes or avocado oil for variations.
