Instructions
 

Preparation

  • Smash the cucumbers by gently pressing them with the flat side of a chef's knife, then cut them into bite-sized pieces.
  • Sprinkle salt over the smashed cucumbers and let them rest in a colander for about 10 minutes to draw out excess water.

Dressing

  • In a mixing bowl, combine soy sauce, rice vinegar, sesame oil, chili oil, garlic, and sugar or honey. Whisk to create the dressing.

Assembly

  • Pat the cucumbers dry, transfer them to a large bowl, and add green onions and cilantro. Pour the dressing over and toss gently.
  • Serve garnished with toasted sesame seeds and crushed red pepper flakes, if desired.

Notes

For best flavor, ensure fresh cucumbers. Consider adding bell peppers or carrots for more crunch. You can make the salad spicy by adjusting chili oil and red pepper flakes.
