Preparation

  • Preheat your oven to 350°F (175°C).
  • Line two baking sheets with parchment paper or silicone mats.
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the egg and vanilla extract, stirring until well combined.
  • In a separate bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Roll the dough into 1-inch balls and roll them in sugar.
  • Place the dough balls on the prepared baking sheets and slightly flatten them.
  • Bake for 8-10 minutes, until the edges are set.
  • Cool on the baking sheets for 5 minutes before transferring to wire racks.

Notes

For a healthier option, substitute half of the all-purpose flour with whole wheat flour. Store cookies in an airtight container at room temperature for up to a week or freeze for three months.
