  • 1 cup all-purpose flour perfect for creating a smooth batter

For the Fish Coating

  • 1 pound fresh cod fillets tender and flaky
  • 2 cups crushed cornflake crumbs ensures delightful crunch

For Frying

  • 1 quart oil for frying, giving a perfect golden finish

Preparation

  • In a medium mixing bowl, combine the chilled sparkling water, all-purpose flour, egg, garlic powder, salt, and pepper. Beat together until the batter is smooth and well mixed.
  • Add the cod fillets to the beer batter and gently stir to ensure each piece is well-coated.
  • In another medium bowl, combine the crushed cornflake crumbs and Cajun seasoning. Mix until fully combined.
  • Take each battered cod fillet and dip it in the cornflake mixture, ensuring all sides are thoroughly coated.

Cooking

  • In a large, heavy skillet or deep fryer, heat the oil to 365 degrees F (185 degrees C).
  • Carefully place the coated cod fillets into the hot oil, frying until they are golden brown and the flesh flakes easily with a fork, about 4-5 minutes per side.
  • Once fried, use a slotted spoon to transfer the fish to a paper towel-lined plate to drain any excess oil.

  • Serve immediately while hot and crispy for the best experience.

Notes

Ensure your oil is sufficiently hot to keep the fillets crisp. For added spice, consider more Cajun seasoning or a splash of hot sauce. Experiment with different white fish like tilapia or halibut.
