For the Chicken

  • 4 pieces boneless, skinless chicken breasts tender and juicy
  • 2 tbsp olive oil rich and smooth for searing
  • 1 tbsp fresh ginger grated for a zesty kick
  • 2 cloves garlic minced, fragrant and aromatic
  • 1/4 cup honey naturally sweet with a dreamy golden hue
  • 2 tbsp soy sauce providing a deep umami richness
  • 1 tbsp rice vinegar light and tangy
  • 1 tsp sriracha sauce for that perfect touch of heat
  • 1 tsp sesame oil nutty and fragrant

For the Bowls

  • 2 cups cooked rice fluffy and comforting
  • 1 cup steamed broccoli vibrant green for a nutritious crunch
  • 1 piece carrot julienned for a pop of color and sweetness
  • 2 tbsp sesame seeds for a lovely crunch

Instructions
 

Preparation

  • Begin by heating the olive oil in a large skillet over medium-high heat until the oil shimmers.
  • Season both sides of the chicken breasts with salt and pepper. Place them gently in the skillet and cook for 6-7 minutes per side until golden brown and thoroughly cooked.
  • While the chicken cooks, whisk together honey, grated ginger, minced garlic, soy sauce, rice vinegar, sriracha sauce, and sesame oil in a bowl.

Cooking

  • Once the chicken is cooked, pour the honey ginger sauce over the chicken in the skillet and let it simmer for 3-4 minutes until thickened.
  • Transfer the chicken to a cutting board and slice it into strips.

Assembly

  • In each serving bowl, layer a scoop of cooked rice, steamed broccoli, and julienned carrots.
  • Top with sliced chicken, drizzle with remaining honey ginger sauce, and sprinkle with sesame seeds.
  • Garnish with fresh cilantro and serve hot.

Notes

For ideal results, make sure the skillet is hot enough for searing and taste as you adjust the seasoning during cooking. For a healthier option, use brown rice or add more vegetables.
