Instructions
 

Preparation

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the sliced Andouille sausage and cook until browned, about 5-7 minutes. Remove the sausage from the pot and set aside.
  • In the same pot, add the diced chicken thighs. Season with salt and pepper, cooking until browned on all sides for approximately 5-7 minutes. Remove the chicken and set it aside with the sausage.
  • Add the diced onion, bell pepper, and celery to the pot. Sauté until softened, approximately 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Cooking

  • Return the sausage and chicken to the pot. Add the diced tomatoes with their juices, chicken broth, rice, okra, Cajun seasoning, thyme, smoked paprika, and cayenne pepper.
  • Bring everything to a boil, then reduce the heat to low.
  • Cover and let the soup simmer for 25-30 minutes until the rice is cooked and the soup has thickened, stirring occasionally to prevent sticking.
  • Taste and adjust the seasoning as desired, adding more salt or spices if needed.
  • To serve, ladle the soup into bowls, garnishing with fresh green onions and parsley. Add lemon wedges for a bright, zesty finish.

Notes

Don’t skip browning the meats for deeper flavor. Customize the heat with cayenne pepper to your preference. This soup can be made ahead to enhance the flavors, and an Instant Pot can be used for quicker preparation.
