For the zesty chili-lime dip

Instructions
 

Preparation

  • Add the shrimp to a food processor and pulse until coarsely chopped but still textured.
  • Transfer the mixture to a large bowl.
  • Incorporate panko breadcrumbs, minced garlic, diced red bell pepper, chopped cilantro, sliced chives, Dijon mustard, eggs, Tabasco sauce, lemon zest, and salt. Mix until combined, being careful not to overmix.
  • Form the mixture into six evenly-sized patties.

Cooking

  • Heat olive oil in a pan over medium-high heat.
  • Place the patties in the hot oil and cook for about 4-5 minutes on each side until golden brown.

Serving

  • Optionally, top with sliced chives and serve with a drizzle of the chili-lime mayonnaise and lemon wedges.

Notes
