Main Ingredients

  • 2 cups Cottage Cheese Creamy and protein-rich, it adds a gentle texture and delightful creaminess to the dish.
  • 10 ounces Frozen Chopped Spinach, thawed and very well drained Offers essential vitamins and minerals, while delivering a savory, earthy taste.
  • 1/3 cup Crumbled Feta Its tanginess cuts through the richness, elevating each bite.
  • 1/3 cup Diced Sweet Onion For a hint of sweetness and aromatic flavor that enhances the dish.
  • 1/4 cup Melted Butter Adds richness and helps bind the ingredients beautifully.
  • 2 tablespoons Freshly Grated Parmesan A touch of umami and depth to round out the flavor profile.
  • 1/8 teaspoon Black Pepper Adds a gentle kick to enhance the overall flavor.
  • 1/8 teaspoon Garlic Powder A must-loved seasoning that introduces an irresistible aroma.
  • 1 dash Nutmeg Elevates the dish with a warm, fragrant hint that complements the spinach.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) to prepare for the baking process.
  • Grease a 1 1/2-quart (9-inch square) casserole dish to prevent sticking and ensure easy serving later.
  • In a large bowl, combine the beaten eggs, cottage cheese, well-drained spinach, feta cheese, diced sweet onion, melted butter, Parmesan, black pepper, garlic powder, and a dash of nutmeg. Stir until well blended.
  • Transfer the mixture into the prepared casserole dish, spreading it evenly.

Cooking

  • Bake the casserole uncovered for about 40-45 minutes, or until the center is almost set.
  • Remove from the oven and allow to cool for 5-10 minutes before slicing and serving warm.

Notes

For a crunch, top with breadcrumbs mixed with melted butter during the last 10 minutes of baking. Consider adding diced bell peppers or mushrooms for variety. Ensure spinach is well-drained to prevent a soggy dish. Ricotta cheese can substitute for cottage cheese.
