Frosting Ingredients

  • 8 oz cream cheese softened and ready to whip
  • 0.5 cup unsalted butter softened to perfection
  • 4 cups powdered sugar fluffy and sweet
  • 1 teaspoon vanilla extract to enhance the frosting

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.
  • In a large mixing bowl, beat together the granulated sugar and vegetable oil until glossy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • Alternately add the flour mixture and buttermilk, starting and ending with flour, until just combined.
  • Fold in the green food coloring gently until the batter is uniformly hued.

Baking

  • Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before flipping them onto a wire rack.

Frosting

  • In a mixing bowl, beat together the cream cheese and butter until smooth.
  • Gradually add the powdered sugar, mixing until fluffy, then stir in the vanilla and a pinch of salt.

Assembly

  • Once the cakes are completely cool, place one layer on a serving plate and spread a layer of frosting on top.
  • Add the second cake layer and frost the entire cake with the cream cheese frosting.
  • Decorate with green sprinkles or shamrock adornments as desired.
