Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  • Press the crumb mixture into the bottom of mini cupcake liners or silicone molds to form the crust.
  • Bake for 8-10 minutes or until the crust turns golden. Set the crusts aside to cool completely.

Filling

  • In a separate bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
  • Add in the vanilla extract and mix until fully incorporated.
  • In another bowl, whip the chilled heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until well combined.
  • Stir in the chopped fresh strawberries.

Assembly

  • Spoon or pipe the filling onto the cooled crusts. Top with mini chocolate chips and sliced strawberries if using.
  • Refrigerate the bites for at least 2 hours before serving.

Notes

For a richer flavor, experiment with flavored extracts like almond or strawberry. Drizzling melted chocolate over the bites can add an indulgent twist. The bites are best enjoyed chilled.
