Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a mini muffin tin with paper liners or lightly grease the wells.
  • In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until evenly coated.
  • Press a tablespoon of the crust mixture firmly into the bottom of each muffin well.
  • Bake for 5-7 minutes, or until golden. Once golden, remove them from the oven and set them aside to cool.

Cheesecake Filling

  • Beat the softened cream cheese with the powdered sugar and vanilla extract until smooth and creamy.
  • Add the sour cream to the mixture and blend until fully combined.
  • Spoon or pipe a generous amount of cheesecake filling over the cooled muffin crusts.

Topping

  • Combine granola or crushed cereal and chopped pecans in a bowl, mixing in melted butter until well coated.
  • Sprinkle the crunch topping over each cheesecake bite, pressing gently to ensure it sticks.

Baking

  • Return to the oven and bake for another 8-10 minutes until the topping is golden.
  • Let bites cool to room temperature.

Serving

  • Toss the diced strawberries with sugar in a small bowl and allow them to sit for 5-10 minutes.
  • Spoon the strawberry topping over the cooled cheesecake crunch bites just before serving.

Notes

Ensure cream cheese is softened at room temperature for a smooth filling. Press the crust mixture firmly to maintain shape. Refrigerate leftovers for up to 3 days.
