Preparation

  • Preheat oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a medium bowl, combine flour, baking powder, and salt.
  • In a large bowl, beat softened butter and sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • Mix in the vanilla extract, lemon zest, and lemon juice.
  • Gradually mix in the dry ingredients, alternating with buttermilk.
  • Fold in chopped strawberries.
  • Divide the batter between the prepared pans and bake for 25-30 minutes.
  • Let cakes cool in pans for 10 minutes, then transfer to wire racks to cool completely.

Frosting

  • In a mixing bowl, beat softened butter and powdered sugar until smooth and fluffy.
  • Add lemon juice and vanilla, then mix until combined.
  • Slowly drizzle in heavy cream and fold in pureed strawberries.

Assembly

  • Once cakes are completely cool, place one layer on a serving plate.
  • Spread frosting between the layers, then place the second layer on top.
  • Frost the top and sides of the cake.
