  • 2 tablespoons powdered sugar for the mousse to sweeten

For Topping

  • Fresh strawberries for garnish
  • Whipped cream adds a touch of indulgence
  • Strawberry glaze or drizzle for a beautiful finish

Instructions

Preparation of the Crust

  • Mix the graham cracker crumbs, granulated sugar, and melted butter in a bowl. Press the mixture firmly into the bottom of a springform pan and refrigerate for about 15 minutes.

Making the Cream Cheese Layer

  • In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla until smooth and creamy. Fold in the heavy whipping cream until well-combined. Spread evenly over the chilled crust.

Preparing the Strawberry Mousse

  • In a small saucepan, combine chopped strawberries, granulated sugar, and lemon juice. Cook until softened, then blend into a smooth puree. Mix gelatin with water and let sit for 5 minutes before gently heating until dissolved, then combine with the puree.

Folding the Cream into the Mousse

  • Whisk the chilled heavy whipping cream with powdered sugar until soft peaks form. Gently fold this into the strawberry mixture and pour the mousse over the cream cheese layer.

Chilling and Serving

  • Cover with plastic wrap and refrigerate for at least 4 hours or until set. Serve with fresh strawberries, whipped cream, and strawberry glaze.

Notes

Use fresh strawberries for best flavor. Chill utensils for fluffier whipped cream. Customize flavors with orange juice or lemon zest. Consider adding a layer of chocolate ganache for variation.
