Ingredients

For the Strawberry Mixture

  • 2 cups fresh strawberries, hulled and sliced
  • ½ cup granulated sugar for the strawberry mixture
  • 1 tablespoon lemon juice

For the Ice Cream Base

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup granulated sugar for the ice cream base
  • 1 teaspoon vanilla extract
  • ½ cup strawberry puree from the strawberry mixture

Instructions

Preparation of Strawberry Mixture

  • In a medium bowl, combine the sliced strawberries with ½ cup of granulated sugar and the tablespoon of lemon juice. Let this sit for about 10-15 minutes.
  • After 10-15 minutes, you can mash the strawberries for a chunkier texture or blend them for a smoother consistency. Set this mixture aside.

Preparation of Ice Cream Base

  • In a large bowl, whisk together the heavy cream, whole milk, the remaining ¾ cup of granulated sugar, and the teaspoon of vanilla extract until the sugar is fully dissolved.
  • Gently fold in the strawberry puree until everything is fully combined.

Churning the Ice Cream

  • Pour the mixture into your ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
  • Transfer the ice cream into an airtight container and freeze for at least four hours, or until firm.

Notes

For added flavor, consider adding a splash of almond extract or folding in mini chocolate chips. You can also use coconut cream or dairy-free milk alternatives for a healthier option.
