Ingredients
  

For the Crust

  • 1.5 cups crushed shortbread cookies Buttery and crisp, providing a delightful crunch.

For the Cheesecake Filling

  • 2 pcs eggs Essential for binding, lending a soft and velvety texture.
  • 1 cup sour cream Contributes to a rich mouthfeel.

For the Strawberry Topping

  • 1.5 cups fresh strawberries, sliced Infusing freshness into every bite.
  • 2 tbsp sugar To toss with strawberries, drawing out their natural juices.
  • 1 tsp lemon juice Brightens and enhances the sweetness of the berries.

Instructions
 

Make the Crust

  • Mix 1 1/2 cups of crushed shortbread cookies with 1/4 cup of melted butter until well combined.
  • Press the mixture firmly into the bottom of a springform pan and refrigerate to chill.

Prepare the Filling

  • In a large mixing bowl, beat together 16 oz of softened cream cheese, 1/2 cup of sugar, and 1 tsp of vanilla extract until smooth and creamy.
  • Add in 2 eggs, one at a time, mixing thoroughly after each addition.
  • Gradually stir in 1 cup of sour cream and 1/4 cup of heavy cream until well blended.

Bake the Cheesecake

  • Pour the cream cheese filling over the chilled crust.
  • Bake in a preheated oven at 325°F (160°C) for 50-55 minutes until the edges are set but the center has a slight jiggle.
  • Allow it to cool to room temperature before refrigerating for at least 4 hours or overnight.

Prepare the Topping

  • Mix 1 1/2 cups of sliced fresh strawberries with 2 tbsp of sugar and 1 tsp of lemon juice.
  • Let the mixture sit for about 30 minutes to achieve the perfect syrupy consistency.

Top the Cheesecake

  • Once your cheesecake has fully set, spoon the strawberry mixture over the top.

Tips for best results: Ensure cream cheese is at room temperature, do not overmix the filling, chill cheesecake to allow flavors to meld.
