Cheesecake Filling

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the all-purpose flour, baking soda, and salt; whisk together gently.
  • In a separate bowl, beat the softened butter and brown sugar until fluffy.
  • Add the egg and one teaspoon of vanilla extract to the creamed mixture, mixing until well combined.
  • Gradually add the dry ingredients into the butter mixture, folding gently while sprinkling in the crushed freeze-dried strawberries.
  • In another bowl, beat the softened cream cheese, powdered sugar, and the additional quarter teaspoon of vanilla extract until smooth and creamy.

Assembly and Baking

  • Scoop out a generous tablespoon of cookie dough, flatten it slightly, and place a spoonful of the cheesecake mixture and a small dollop of strawberry jam at the center.
  • Fold the dough around the filling, creating a ball, and place it on a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes or until the edges turn golden brown.
