Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • In a medium bowl, combine the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Mix until fully combined and press firmly into the bottom of a springform pan.
  • Bake the crust for about 10 minutes until golden, then remove from the oven and allow to cool.

Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Add 1 cup of granulated sugar and vanilla extract, and continue to beat until well blended.
  • Introduce the eggs one at a time, mixing well after each addition. Stir in the sour cream until the mixture is smooth.

Strawberry Swirl

  • In a separate bowl, whisk together the strawberry puree, 2 tablespoons sugar, and lemon juice.
  • Pour the cream cheese mixture over the cooled crust, then spoon small dollops of the strawberry puree over the top.
  • Using a toothpick or knife, gently swirl the strawberry puree into the cheesecake batter.

Baking

  • Place the cheesecake in the preheated oven and bake for 55-60 minutes until the center is set but slightly jiggly.
  • Turn off the oven and leave the cheesecake inside to cool gradually for an hour.
  • Allow it to sit at room temperature before transferring it to the refrigerator to chill completely for at least 4 hours, or overnight.

Notes

For a healthier twist, use Greek yogurt instead of sour cream or a nut-based crust. Avoid overmixing and ensure room temperature ingredients for best results.
