Ingredients
  

For the sweet potatoes

  • 4 medium medium sweet potatoes Wash thoroughly and pierce with a fork before baking.

For the filling

  • 1 tablespoon olive oil For sautéing the vegetables.
  • 1 small onion, finely chopped Adds aromatic depth.
  • 2 cloves garlic, minced Fills the kitchen with irresistible aromas.
  • 1 cup sliced cremini mushrooms Contributes to the dish's texture.
  • 3 cups fresh spinach leaves Adds nutritional value.
  • 1/2 cup softened cream cheese For a creamy finish.
  • 1/4 cup sour cream Enhances the creaminess.
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • 1/4 cup grated Parmesan cheese For topping each stuffed potato.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash the sweet potatoes thoroughly and pierce them with a fork.
  • Bake the sweet potatoes for 45-60 minutes, or until they are tender.
  • While the sweet potatoes bake, heat olive oil in a skillet over medium heat.
  • Add the onions and sauté for around 3 minutes until they become translucent.
  • Next, add the garlic and sliced mushrooms to the skillet. Cook for an additional 5 minutes.
  • Stir in the fresh spinach and cook until wilted, about 2 minutes.
  • In a separate bowl, mix the softened cream cheese and sour cream until smooth.
  • Combine the creamy mixture with the cooked vegetables and season with salt, pepper, and thyme.
  • Once the sweet potatoes are done baking, slice them open gently and fluff the inside.
  • Fill each sweet potato with the creamy mushroom and spinach mixture, packing it well.
  • Sprinkle grated Parmesan cheese on top and return them to the oven for 10-15 minutes.
  • Serve warm and enjoy!

Notes

For extra flavor, roast the sweet potatoes with a sprinkle of cinnamon before stuffing. Consider adding crushed red pepper flakes for heat or cooked quinoa/brown rice for added protein.
