Sun Dried Tomato Spinach and Ricotta Grilled Cheese

Ingredients
  

Cheese Mixture

  • 2 oz shredded unsmoked provolone cheese providing a gentle melting quality.
  • 1/3 cup ricotta cheese adding a creamy and rich texture.
  • 3 Tbsp finely shredded parmesan cheese giving a nuttier flavor.
  • 1 small garlic clove, minced for a hint of aromatic depth.
  • Salt and freshly ground black pepper, to taste enhancing all the flavors.

Vegetables

  • 3 cups fresh spinach slightly packed, bringing freshness and color.
  • 2 Tbsp chopped fresh basil contributing an herbaceous note.
  • 3 Tbsp minced sun-dried tomatoes lending a tangy richness.

Bread

  • 4 slices Sara Lee Artesano Golden Wheat Bread offering a soft and slightly sweet base.

Butter

  • 8 tsp butter, softened ensuring a beautiful golden brown crust.

Instructions
 

Preparation

  • Mix the provolone, ricotta, parmesan, and minced garlic in a bowl. Season this blend with salt and pepper to taste, then set it aside.
  • Bring 1/2-inch of water to a boil in a medium pot and insert a steamer basket. Add the fresh spinach, cover, and let it steam for 1-2 minutes until it just wilts.
  • Transfer the spinach to a paper towel. Fold the towel over the spinach and gently press to remove excess moisture.
  • Spread 1 tsp of butter on both sides of each slice of bread. On two slices, layer the wilted spinach evenly and sprinkle the chopped basil on top.
  • Spread the cheese mixture evenly over the spinach, then top with the minced sun-dried tomatoes.
  • Place the remaining slices of bread on top to form sandwiches.

Cooking

  • Heat a large non-stick skillet over medium-low heat. Place the sandwiches in the skillet, cover, and cook until golden brown on the bottom, about 4-6 minutes.
  • Flip the sandwiches and continue cooking until the other side is golden and the cheese has melted, about 2 more minutes.

Notes

For variations, experiment with different cheeses, add herbs to the cheese mixture, or use a panini press for crispy edges. For a spicier kick, add a dash of red pepper flakes.
