Sweet Corn and Zucchini Pie

Ingredients
  

For the pie filling

  • 4 tablespoons butter Unsalted preferred
  • 1/2 pieces yellow onion, diced
  • 2 ears sweet corn, kernels removed Or about 1 1/2 cups canned or frozen corn
  • 2 large zucchini, sliced very thinly (about 4 cups)
  • 8 ounces sliced mushrooms
  • 1 tablespoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 12 ounces shredded cheese Mix of Mozzarella and Swiss
  • 4 pieces eggs, beaten

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large, deep skillet, heat the butter over medium-high heat until it melts and starts to bubble gently.
  • Add the diced onions, thinly sliced zucchini, and mushrooms to the skillet. Sauté these vegetables for 5-10 minutes, stirring occasionally, until they soften and release their wonderful aromas.
  • While the vegetables are sautéing, carefully cut the kernels off the corn cobs.
  • Once the veggies have reached the perfect tenderness, mix in the fresh corn kernels and sauté for a few more minutes until everything melds together beautifully.
  • Remove the skillet from the heat. Let the mixture cool for a few minutes, then stir in the dried basil, oregano, salt, shredded cheese, and beaten eggs until well combined.
  • Prepare your pie dish by lining it with parchment paper or greasing it thoroughly with nonstick spray.
  • Transfer the vegetable and cheese mixture into the lined pie pan. Arrange the zucchini slices on top so they lay flat and look appealing. Sprinkle a bit of extra cheese on top.

Baking

  • Cover the pie with greased foil and bake in the preheated oven for 20 minutes.
  • After 20 minutes, carefully remove the foil and allow the pie to bake for an additional 5 minutes.
  • Once done, remove the pie from the oven and let it stand for about 10-15 minutes before slicing.

Notes

Consider adding a pinch of red pepper flakes for a delightful kick. You can also substitute vegetables or cheese based on your preferences.
