Preparation

  • In a medium saucepan over medium heat, combine the fresh pineapple, 1/2 cup of water, white vinegar, honey, soy sauce, minced ginger, and garlic.
  • Allow the mixture to come to a gentle simmer.

Cooking

  • Reduce the heat and let the sauce simmer for about 10 minutes to tenderize the pineapple and meld the flavors.
  • In a small bowl, dissolve the cornstarch in 2 tablespoons of water to form a smooth slurry.
  • Stir this slurry into the simmering sauce along with the red chili flakes and salt.
  • Continue simmering for another 5 minutes to thicken the sauce.
  • Remove from heat and let cool slightly; the sauce will thicken more as it cools.

Notes

Always use fresh pineapple for best flavor and consider roasting it beforehand for deeper sweetness. Adjust spice levels by varying chili flakes, and for extra zing, add lime or lemon juice just before serving.
