For the Cream Cheese Filling

  • 1/2 cup Cream Cheese, softened for a rich, velvety filling
  • 2 tbsp Sugar to sweeten and enhance the cream cheese
  • 1/2 tsp Vanilla Extract adding a hint of warmth and depth
  • 1/2 cup Strawberries, diced bringing freshness and natural sweetness

For the Quesadillas

  • 4 pieces Tortillas (6-inch) providing the base for this delicious treat
  • 2 tbsp Butter, softened for that perfect crispness
  • 1 tsp Sugar to sprinkle joy upon the finished quesadilla
  • 1/2 tsp Cinnamon bringing warmth and spice to the dish
  • to taste Strawberry sauce for dipping for a delightful finishing touch

Instructions
 

Preparation

  • In a mixing bowl, combine the softened cream cheese, sugar, and vanilla extract. Beat until smooth and creamy.
  • Dice the strawberries and fold them into the cream cheese mixture.

Cooking

  • Spread half of the cream cheese mixture over one tortilla.
  • Melt 1 teaspoon of butter in a skillet over medium-high heat and place the tortilla in the pan with the cream cheese side up.
  • Spread 1 additional teaspoon of softened butter on a second tortilla and place it butter-side up on top of the cream cheese-covered tortilla.
  • Cook both sides for 2-3 minutes, until golden and crispy.
  • Mix the cinnamon and the sugar, then sprinkle over the finished quesadilla.
  • Repeat the process for the second quesadilla.
  • Slice into wedges after letting them sit for 2 minutes, and serve with strawberry sauce for dipping.

Notes

For added flavor, you can include a splash of lemon juice in the cream cheese mixture. Substitute strawberries with other fruits like blueberries or bananas for variation. Store cooled quesadillas in an airtight container in the fridge for up to 3 days.
