Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, dried oregano, salt, and pepper.
  • Dip each zucchini fry into the beaten eggs, letting the excess drip off.
  • Roll the zucchini in the cheesy breadcrumb mixture until coated.

Baking

  • Place the coated fries on the parchment-lined baking sheet, ensuring they are evenly spaced.
  • Lightly spray the fries with olive oil.
  • Bake for 20-25 minutes, flipping halfway through.
  • Remove from the oven when golden and crispy.

Notes

For a crispier finish, allow zucchini to sweat for 30 minutes before coating. Don't overcrowd the baking sheet to ensure even cooking.
