Instructions

Cooking Chicken

  • Heat a skillet over medium-high heat and add the diced chicken. Cook until browned on all sides.
  • In a separate bowl, combine soy sauce, brown sugar, honey, rice vinegar, minced garlic, and grated ginger. Pour this mixture over the browned chicken and let it simmer.
  • Mix the cornstarch with water to create a slurry and stir it into the skillet until the sauce thickens.

Preparing Avocado

  • In a bowl, gently toss the diced avocado with lime juice and a pinch of salt to enhance flavor and prevent browning.

Assembling the Stack

  • Press a layer of cooked rice into the bottom of a greased ring mold or small bowl, ensuring it's compact.
  • Add a layer of the seasoned avocado, followed by a generous layer of the teriyaki chicken.

Finishing Touches

  • Sprinkle sesame seeds and chopped green onions over the top before serving.

Serving

  • Carefully lift the ring mold or bowl to reveal the layered stacks. Serve immediately.

Notes

Consider marinating the chicken in the teriyaki sauce for 30 minutes for deeper flavor. Add veggies for nutrition, and for a healthier swap, use cauliflower rice instead of regular rice.
