Teriyaki Shrimp and Pineapple Rice Stack

Ingredients
  

Shrimp Marinade

  • 1 lb large shrimp, peeled and deveined
  • 1/4 cup teriyaki sauce rich and sweet with an umami kick
  • 2 tbsp soy sauce adds depth and saltiness
  • 1 tbsp sesame oil fragrant and nutty
  • 1 tbsp honey for extra sweetness
  • 2 cloves garlic, minced aromatic and flavorful
  • 1 tsp grated fresh ginger vibrant and refreshing
  • 1/2 tsp red pepper flakes optional, for a touch of spice

Pineapple Rice

  • 2 cups cooked white or jasmine rice preferably day-old
  • 1 cup fresh pineapple, diced juicy and sweet
  • 1 tbsp sesame oil for that nutty flavor
  • 1/4 cup red bell pepper, diced sweet and colorful
  • 1 tbsp soy sauce to enhance the flavor of the rice
  • 1 tsp rice vinegar for a tangy contrast
  • 1/2 tsp garlic powder to deepen the garlic flavor
  • to taste salt and pepper to season

Garnishes

  • to taste fresh cilantro, chopped for a pop of freshness
  • to taste sesame seeds for added texture
  • to taste lime wedges for a zesty finish

Instructions
 

Prepare the Teriyaki Shrimp

  • In a medium bowl, combine the teriyaki sauce, soy sauce, sesame oil, honey, garlic, ginger, and red pepper flakes (if using). Whisk until well-blended.
  • Add the shrimp to the bowl and toss to coat evenly. Allow the shrimp to marinate for at least 15 minutes.

Cook the Shrimp

  • Heat a large skillet over medium-high heat and add the marinated shrimp, cooking for 2-3 minutes per side until fully cooked. Remove from heat.

Prepare the Pineapple Rice

  • In the same skillet, add sesame oil and heat. Toss in the green onions, red bell pepper, and diced pineapple. Sauté for 2-3 minutes until softened.

Combine the Rice

  • Add the cooked rice to the skillet, breaking it up gently. Stir in soy sauce, rice vinegar, garlic powder, and season with salt and pepper. Sauté for another 2-3 minutes.

Assemble the Stack

  • Utilize a ring mold or small bowl to layer the pineapple rice followed by the teriyaki shrimp. Press down gently.

Garnish and Serve

  • Garnish each plate with chopped cilantro, sesame seeds, and lime juice. Serve immediately.

Notes

Marinate shrimp longer for deeper flavors. Fresh pineapple is preferred, but canned works if drained. Day-old rice prevents mushiness. Skip red pepper flakes for a milder dish. Present on individual plates for an impressive look.
