Dressing Ingredients

Instructions
 

Cooking the Chicken

  • Heat a dash of oil in a skillet over medium heat. Place the chicken breasts in the hot skillet and sear for about 6-7 minutes on each side, or until golden brown and cooked through.

Resting the Chicken

  • Remove the chicken from the skillet and let it rest for 5 minutes before slicing.

Preparing the Vegetables

  • Chop the bell peppers, slice the cucumbers, and julienne the carrots.

Making the Dressing

  • In a mixing bowl, whisk together the creamy peanut butter, soy sauce, lime juice, honey (or maple syrup), sesame oil, and Sriracha until smooth and creamy.

Combining Ingredients

  • In a large salad bowl, toss the sliced chicken with the prepared veggies. Pour the peanut dressing over the top and mix well.

Serving the Salad
