For the Peanut Dressing

For the Noodle Bowl

  • 4 pieces frozen spring rolls Golden-brown crunch.
  • 1/2 cup carrots Thinly sliced for sweetness.
  • 1/2 cup cucumber Julienned for refreshing crunch.
  • 1/2 medium red bell pepper Julienned for sweet color.
  • 6 ounces thin rice noodles Cooked and chilled for texture.
  • 1/4 cup cilantro Chopped for herbaceous note.
  • 2 tablespoons fresh mint Bright and fragrant.
  • 2 tablespoons peanuts Chopped for crunch and nuttiness.

Instructions
 

Preparation

  • In a small jar, combine sesame oil, rice vinegar, honey, minced garlic, grated ginger, chili flakes, and salt. Shake well until smooth.
  • Bake the frozen spring rolls according to package directions for around 12 minutes. Let cool for 5 minutes before slicing them in half diagonally.
  • In a large bowl, assemble the chilled rice noodles, sliced carrots, julienned cucumber, and red bell pepper.
  • Drizzle your dressing over the assembled noodles and vegetables.
  • Place the sliced spring rolls atop the noodle bowl with cilantro, mint, and chopped peanuts. Serve immediately.

Notes

For added texture and flavor, include snap peas or avocados. Adjust chili flakes for desired spice level. Serve fresh for maximum crunch.
