Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, and salt.
  • In a separate bowl, cream together the softened unsalted butter and brown sugar until light and fluffy.
  • Add the large egg, molasses, and vanilla extract, mixing until smooth and well combined.
  • Gradually add the dry mixture into the wet mixture, mixing gently until a dough forms.
  • Divide the dough in half, wrap in plastic wrap, and chill in the refrigerator for at least one hour.

Baking

  • Once chilled, roll out the dough on a floured surface to about 1/4 inch thickness.
  • Use cookie cutters to create shapes and place them on a prepared baking tray.
  • Bake for approximately 8-10 minutes, or until golden brown, then cool completely on a wire rack.

Royal Icing Preparation

  • Beat the egg whites until stiff peaks form, then gradually add powdered sugar and lemon juice.
  • Transfer the icing into piping bags for decoration.

Decoration

  • Decorate the cookies with royal icing to create a winter village scene.
  • Allow the icing to harden for 1-2 hours before displaying or serving.
