Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, whisk together the eggs, crushed pineapple with juice, and toasted chopped pecans (if using).
  • In a separate large bowl, whisk together the all-purpose flour, granulated sugar, and baking soda until well blended.
  • Gently fold the pineapple-egg mixture into the flour mixture. Mix until just combined—don’t overdo it; small lumps are fine!
  • Grease a 9x13 inch baking dish using cooking spray or butter to prevent sticking. Pour the cake batter into the dish and spread it evenly.

Baking

  • Place your dish in the preheated oven and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Frosting
